Owing to its variety of natural landscapes, Sobrarbe is a privileged enclave for mushroom lovers. Throughout the year, a wide variety of exquisite species can be picked, with prized varieties being Lactarius deliciosus, Boletus eduli (porcini mushrooms) Amanita cesarea, Hygrophorus latitabundus, Pleurotus eryngii and Craterellus cornucopioides (black chanterelle).
Throughout the year there are also mycology events held at weekends in Aínsa and surrounding villages where people are taught to collect species and local restaurant owners prepare delicious dishes to sample.
The first Sunday in February is when the Black Truffle event is held in Aínsa, although visitors can taste different dishes featuring black truffles in restaurants in Aínsa and all over Sobrarbe all year round.
